Homemade Lasagna with Ground Chicken

Yummy in my tummy!!

I love making homemade pasta when I have the time. I do my best to make my own pasta from scratch. And, some days I get lazy and use store bought pasta. I created this recipe with homemade semolina pasta for my daughter who is always craving lasagna. I hope you try it!

PS. I don’t always measure. Sometimes I just eye ball it!

Pasta sheet ingredients:

  • 2 1/2 cups semolina flour
  • 5 eggs
  • 1 TBSP olive oil
  • Pinch of Himalayan pink salt
Make a well in the flour & mix the wet ingredients creating a dough. Knead into a ball.
Rolling the dough through the pasta machine after allowing the dough to sit for an hour

Filling ingredients:

  • Ground chicken (seasoned and cooked to your liking)
  • Bunches of basil leaves
  • Fresh sliced mozzarella cheese
  • Homemade sauce (or you can use store bought)

Homemade sauce ingredients:

  • 1 1/2 cups cherry tomatoes (adjust based on serving)
  • Feta cheese (I use Macedonian – less salty)
  • 5-6 cloves of garlic
  • Fresh basil leaves
  • Fresh oregano leaves
  • Your preferred seasonings
Cook the ingredients in a pan & transfer into a blender.
Start assembling with the pasta sheet, ground meat and basil leaves
Add your fresh sliced mozzarella with more basil leaves
Pour over sauce and continue to repeat the steps until you are done. Garnish with basil
Bake in the over for 40-45 minutes at 375! Enjoy! 🙂
